"Grapes are whole brunch pressed. The time with skins is just an hour and a half. Fermentation is spontaneous with native yeast. Aged for a couple of months with lees in both concrete and inox before bottling unfiltered. No fining. Total sulfur: 30ppm. 2021 vintage in the Uco Valley was an excellent one; cold with just enough humidity for winemaker Juanfa Suarez’ desired ripeness."
