"It was important to us to have a sparkling wine as part of the selection and Glera, the grape used to make Prosecco, was the obvious choice. This example is from purchased fruit grown in limestone-based clay; the fruit is harvested first thing in the morning, so it arrives still cool, then the must is fermented in stainless steel and some of the carbon dioxide produced by the fermentation is retained when the wine is bottled, as is typical with Prosecco. This example is aromatic with loads of white flowers and pear blossom, and it reminds me of French-milled soap in a good way. The wine is slightly off-dry and its citrusy acidity adds freshness that carries through to the finish. The bubbles are frothy and persistent. We would happily drink this by the pool or bring to a party to serve as an aperitif, ideally with some cheese or fried food."
