"Grapes are hand harvested and crushed directly in the press. Fermentation with ambient yeast at controlled temperatures. Malolactic fermentation is spontaneous. Second fermentation in bottle. Rests on lees until the spring. Fining: bentonite and vegetal proteins. Unfiltered. Total sulfur: 40ppm."
