"Made by Jeff Carrel. True Cool Climate Burgundy Pinot is now unattainable. But, this low intervention, de-stemmed but naturally fermented with no sulfites nor enzymes, and single Estate Pinot is shocking value. It hails from the Northeast of Limoux in Languedoc, grown on silty clay without pesticides. Picked at night, aged in concrete for 6 months. Named “coteaux” (meaning hillside) after the location of the vineyards, nestled in the slopes of the French Pyrenees. It’s a bright cherries and spices Pinot Noir that truly tastes like one."
