"The Melon de Bourgogne grapes are fermented on the ambient yeast in temperature-controlled stainless steel tanks and matured on the lees for six months in glass-lined underground concrete tanks. On the nose, summer seashore air, fresh lime, green tea, and crushed seashells alternate with Seckel pears, salt-cured lemons, and freshly baked bread, as the wine evolves in the glass. On the palate, the wine has a bright core of lime-citric fruit, infused with fresh sage and chamomile; all of which is buffered by refreshing acidity and crunchy minerality. Positively delicious!"
