Desert Door Texas Sotol was born in the West Texas desert, where its founders first encountered the Sotol plant. Hundreds of years ago, this spiky desert succulent was used by Indigenous tribes for everything from tools and food to fermented drink.

“Sotol” is both the name of the spirit and the plant it's made from. They wild-harvest all their sotol on ranches across Texas; they don’t farm or cultivate any of it. Wild-harvesting is a much more sustainable practice than monocropping and helps conserve valuable resources such as land and water.

The Conservation Series was created to bring attention to individuals and organizations who have made significant contributions in the realm of conservation. Pollinator highlights one of the overlooked heroes of the earth’s ecosystem - the humble bee. A portion of the proceeds from Pollinator help fund the ongoing work of Wild Spirit Wild Places, Desert Door’s non-profit organization.

The good news is there’s a simple solution to bring back native Texas bees: plant more native plants. Native plants provide the pollen and nectar that are the primary food source for bees. The mesquite, persimmon, and honeysuckle featured in Pollinator are all native to Texas and all are pollinated by a native bee species.

Pollinator features a nose marked by floral notes, vanilla, honeysuckle, and clover. On the lips, you’ll get buttery vanilla custard, mesquite bean, and rosemary. The finish delivers notes of persimmon, hibiscus, and sage.
