"There's a huge difference between a generic "sherry cask" created for aging a spirit and a prime sherry cask that held high quality wine for decades. For a long time, we'd been working with Sherry expert and friend of PM, Eduardo Ojeda, in order to source some of these casks, but it is rare for bodegas to get rid of them – they have no incentive to do so, as they can use the barrels indefinitely. In 2024, however, Eduardo let us know that a friend of his was willing to part ways with a number of freshly emptied Oloroso sherry casks, and we scored twenty exceptional ones. We chose to send them to friends of ours who distill, blend, and bottle exceptional spirits. This is the first release in this series, a full proof rye whiskey distilled by Dad's Hat. It aged for six years before finishing for eight months in an Oloroso sherry barrel."
