"The vines grow in muschelkalk, the limestone-rich soil full of fossilized oyster shells, which, as in Champagne and Chablis, is an extension of the Paris Basin. The appearance suggests the glassy reflections of the Rhine’s black slate, flecked with lemon peel and the skins of Golden delicious apples, both of which emerge in the nose when the wine is first poured. Later, aromas of sun-warmed Forelle pears, fresh parsley leaves, and even the smell of rain in the air, appear to move in and out of the foreground, alternating with faint suggestions of dried chamomile, fresh sourdough, and crushed seashells, as the nose evolves in the glass. On the palate, the wine is fine-grained, and subtly creamy with a solid core of sapid, honeyed, gravel-infused white fruit flavors, which continue to evolve and put on weight, even after the creamy mousse subsides. This is great wine the minute you pour it, and a spectacular wine fifteen minutes later."
