Chop Shop is a California Cabernet Sauvignon ready to be enjoyed any night of the week with everything from pizza to hamburgers to steak, and it is equally as great on its own.
A blend of Lodi and Clarksburg AVAs, this crowd-pleasing style has complex flavors of black cherry, leather and tobacco are balanced by hints of cocoa and violet. A touch of Petit Verdot and Cabernet Franc add some dark, complex nuances to this otherwise juicy Cabernet Sauvignon. This is a red wine that is friendly and versatile, with underlining masculinity and structure.
The grapes were harvested at night to make sure they were as cold as possible upon reaching the winery. Fermented occurred in stainless steel. Aging occurred in a combination of stainless steel and oak (40% new French and American) to give the final product structure and subtle undertones of pepper and earth.
