"This wine is made of 100% Chardonnay. Ostréa is latin for "oyster", and is name of this cuvée because of its clay and limestone soil. The vineyard is isolated by forest, and is an organic farming oasis. The juice is fermented and aged in stainless steel for 18 months, to allow the wine to express its electricity and structure. The wine's minerality shines at the forefront, but is tied together by juicy citrus, nectarine, and honeysuckle. We would pair this with hamachi crudo with a yuzu and mint dressing or, seared yellowtail and a truffled herb salad with a soy-ginger vinaigrette."
