Manual harvesting of perfectly ripe and ripe grapes in late harvest. The fermentation on the skins takes place in 10 hl oak truncated conical vats: this allows me to obtain a greater heat exchange and avoid excessive temperature increases. Then, frequent punching down, without temperature control and without the use of selected yeasts, enzymes, etc. Soft pressing and subsequent rest period in 30 hl Slavonian oak barrels for 11 months in contact with the noble lees. The wine is left to mature for another 12 months in the same barrels. The bottling is done in the waning moon of September without the aid of filtration and clarification.
Yellow color with golden reflections. Intense aroma, with marked floral scents, dried fruit and citrus. A slight mineral note that becomes more tenacious in mature wines. In the taste, a wine with a good acidity typical of the yellow ribolla, slightly tannic and sapid. Spicy aftertaste. It evolves in the glass.
