The grapes are destemmed and soft-pressed. The free-run juice is fermented in temperature-controlled, stainless steel tanks. The wine then rests in cement vats prior to bottling, six months after harvest
This is the classic Friulian aperitif. It is excellent with sausages and fresh cheese. It is also good with fish-based dishes and pasta.
Starting in the mid-1980s, Count Brandino Brandolini began to pursue his ambitious goal of producing world-class wines at his familys picture-perfect 500-acre estate in the Friuli district of northeast Italy. After several years of study at the University of Bordeaux, and much time spent at the familys Bordeaux estate, the highly regarded Chteau Greysac, Brandolini became convinced that Friuli possessed the ideal terroir for production of superb quality wine.Working with his friend and colleague, Georges Pauli, a consultant to a number of leading Bordeaux properties, Brandolini implemented a series of radical improvements at Vistortas existing 80-acre vineyard, which has been planted with Merlot for over a century. Significant investments were made in the construction of a state-of-the-art winery and cellars. As a result, 20 years later, Vistorta has become the source of one of northeast Italys most sought-after red wines.
