The CHATEAU HAUT SELVE Graves Rouge, a Cabernet Sauvignon and Merlot blend from Bordeaux's left bank, comes from one of the best vintages of this century. Aromas of plum, cassis, green pepper, herbs, and spice come forth. The fruits are ripe and succulent. The acidity is solid and the tannins are enticing for this much praised Bordeaux Rouge! This goes amazingly well with steak au poivre or a smokey mushroom-packed vegan cassoulet.
Deep gravel (62%) and heavy lime gravel (38%). 32 hectares on 45 of the property. Average production: 150 000 bottles. Sustainable Agriculture. Double guyot. 5500 vines/hectares Illuminated leaf area up to 13,000 m² Organic manure landscarping is used for the care of soil. Sustainable protection of the vineyard in terms of phytosanitary treatments handpicked. 3 weeks of maceration.
