This bone dry sparkling rose becomes cloudy when you shake it. Rosato colfondo refers to the sediment resting at the bottom of the bottle. This is the result of a second fermentation which occurs in the bottle. During bottling, some lees is added. The remaining yeast in the lees feast on the residual sugar naturally causing delicate bubbles to form. When the feast is over, a bone dry, delicious sparkling rose is born, ready to be poured exuding its savory flavors of grapefruit.
